Tempura Oyster Mushrooms with Matcha Salt

Ingredients
20 oyster mushrooms
1 1/4 cup rice flour
1 cup cold club soda
1 egg yolk
1 quart vegetable oil, for frying
Matcha salt:
1 tbsp kosher salt
2 tsp matcha powder
Method
Pour oil into a wide pot until it reaches a depth of 1 inch. Heat to 375°F.
In a medium bowl, whisk rice flour and egg yolk together. Continue whisking while pouring in club soda until completely mixed.
Gently dip oyster mushrooms into batter and shake off excess. Fry for about 2 minutes, flipping once, until crisp and golden brown. Drain on paper towels and sprinkle with matcha salt. Serve immediately.
To make matcha salt, simply mix matcha powder and salt together in a small bowl.
