Sautéed Olives with Citrus and Pistachios

Sautéed Olives with Citrus and Pistachios

Makes 3 cups

Ingredients

3 cups mixed olives, rinsed well
1/2 cup extra-virgin olive oil
1 tbsp orange marmalade
zest of 1 lemon
1/2 tsp crushed red pepper flakes
8-10 sprigs fresh thyme
1/4 - 1/3 cup pistachios, toasted and finely chopped

Method

In a heavy skillet, heat olives, olive oil, orange marmalade, lemon zest, red pepper flakes, and thyme over low-medium heat, stirring often, until olives are heated through. If you hear the oil begin to bubble, the heat is too high.

Once the olives are heated through, allow them to cool until they are still warm but easy to pick up and handle - about 10 minutes. Before serving, sprinkle chopped pisatchios over the top.
