Open-Faced Chickpea Salad Sandwich with Shaved Radish
Serves 4
Ingredients
1 15 oz can chickpeas, drained
1/4 cup low-fat mayonnaise
1/2 tsp Dijon mustard
1 heaping tbsp red onion, finely chopped
1 heaping tablespoon celery, finely chopped
1/4 tsp paprika
1/4 tsp sea salt
1/4 tsp freshly grated lemon zest
1 tsp freshly squeezed lemon juice
1/8 tsp freshly ground black pepper
pinch of cayenne pepper
2 radishes, thinly sliced
2 - 4 thick slices of rustic bread, toasted
Method
Add chickpeas, mayonnaise, and mustard to the bowl of a food processor and process until smooth or mash well with a fork. Transfer to a mixing bowl and stir in red onion, celery, paprika, sea salt, lemon zest, lemon juice, black pepper, and cayenne pepper.
Top toasted bread slices with chickpea salad, add thinly sliced radishes, then top with a sprinkle of sea salt and a squeeze of fresh lemon juice, to taste.
