Grilled Fennel, Grape, and Manchego Flatbread

Grilled Fennel, Grape, and Manchego Flatbread

Serves 4-6

Ingredients

1 bunch seedless red grapes
1 bulb fennel, thinly sliced
1 cup arugula
2-3 oz Manchego cheese
1/4 cup quark or Greek yogurt
2 tbsp olive oil

Flatbread dough:
2 cups all-purpose flour
1 tsp kosher salt
1/2 tsp baking soda
1 tsp granulated sugar
2 tbsp Greek yogurt
2 tbsp extra-virgin olive oil
1 clove garlic, minced
1 tsp active-dry yeast
3/4 cup warm water

Method

Dough:

Add warm water to a small bowl and activate the dry yeast by sprinkling it over the water and allowing it to sit for about 5-10 minutes, or until you notice froth forming on top.

Sift flour into a medium mixing bowl with baking soda and salt.

Add sugar, yogurt, and olive oil to the bowl of a stand mixer and whisk well to combine. Add the water and activated yeast to the bowl, then attach the dough hook. While on medium speed, slowly add the flour until thoroughly mixed. Knead with the dough hook for about 5 minutes, until the dough is soft and springs back when touched. Turn dough out onto a lightly floured surface and form into a smooth ball. Place dough ball into a greased bowl, cover, and allow to rise at room temperature for about an hour or until doubled in size.

Once dough has risen, cut into 2 equal pieces and stretch or roll into round or rectangular flatbread shape, as desired.

Preheat grill on high or heat a grill pan on the stove over high heat.

Place the entire bunch of grapes on the grill, preferably brushed with a bit of oil. Cook until a bit soft and dark grill mark appear. Remove and set aside.

Toss fennel with olive oil and a bit of salt. Heat a skillet on the grill and sauté fennel until tender and golden, about 6 minutes.

Place dough on grill and cook until bubbling and golden brown, flip and cook until golden on the other side.

Remove flatbread from grill, brush each flatbread with about 2 tablespoons of quark or yogurt, top with grapes, fennel, arugula, cheese, and sprinkle with a bit of salt and a squeeze of fresh lemon juiece, to taste.
